Chao’an County in southern China’s Guangdong province is home to Shui Xian, one of the finest sub-varieties of oolong Chinese tea.

Only 20 kilometers from the Pacific Ocean, it rains for over 140 days out of the year here, bringing a total of almost 7 feet of rainfall. The wet climate creates foggy weather that the Shui Xian tea plants thrive in.
But it’s not all tropical, as Shui Xian tea is grown on hills that soar more than 1,000 meters above sea level. This gives the Shui Xian plants their favorite temperature pattern: very hot (35℃) during the day while below freezing (-2℃) at night. This helps important nutrients build up in tea leaves.
